Pillow Love!

When we first launched our pillow store a couple weeks ago, we didn't have photos of the actual pillows to share yet. I'm happy to say that now we do! 

We have updated our store with photos of all 10 of our fun pillows! We also included a few photos of different pillows grouped together to show their versatility. It is so fun seeing how well our pillows work with each other.

Food Friday: Lemon-Spinach Chicken with Mashed Potatoes & Tomatoes

Every once in a while I'll get a craving for chicken and mashed potatoes, and when I do, this is my go-to recipe, from all-recipes.com



The chicken is dredged in a simple flour, salt and pepper mixture, then cooked with chicken broth, white wine and lemon juice. The broth mixture forms a nice gravy and the lemon flavor really soaks into the spinach. The cherry tomatoes add a really yummy burst of flavor too. 



Lemon-Spinach Chicken with Mashed Potatoes & Tomatoes

Ingredients:

1- 10-ounce package of fresh spinach
1/2 flour
3/4 teaspoon salt
1/2 teaspoon pepper
4 boneless, skinless chicken breasts
2 tablespoons butter
1/2 cup chicken broth
1/4 cup dry white wine
2 tablespoons fresh lemon juice
2 garlic cloves, minced
Mashed potatoes *(My "recipe" is below)
Grape or cherry tomatoes, sliced in half

Directions:

In a large, lightly greased skillet, cook spinach until it wilts, this just takes a couple minutes. Transfer it to a bowl or plate. 
Combine the flour, salt and pepper in a shallow bowl. Dredge the chicken in this flour mixture, until chicken is coated. 
In the same skilled used to wilt the spinach, melt the butter and add the chicken. Cook the chicken about 4-5 minutes per side until chicken is cooked. (You can either remove the chicken or keep it in the skillet for this next step. I have tried both and both tasted delicious.)
Add chicken broth, wine, lemon juice and garlic to the pan and bring to a boil. Stir to loosen the leftovers at the bottom of the skillet. Cook about 2 minutes, until the liquid is reduced by half. Stir in the spinach and cook until heated, about a minute.
Serve on a plate of mashed potatoes, add spinach and chicken and top with tomatoes. 

*Mashed potatoes: I don't follow a recipe, but mix ingredients to taste. 
Ingredients: Two potatoes, washed and cut into fourths (skin-on); butter; garlic; Parmesan cheese; milk; salt and pepper
Directions: Boil potatoes until they are cooked (if a fork or knife can easily slide through them, they're done). Drain water and use a large metal spoon to smash the potatoes (you can leave them as chunky as you like). I usually then add a couple tablespoons butter, about 1/4 cup grated Parmesan, a couple cloves of minced garlic, a little less than 1/4 cup milk and continue mashing until it forms the consistency I want. Add salt and pepper to taste.

Random Loves: Mocktails, Milkshakes, Florals & The Jungle Book

The weather has been so gorgeous lately here in Sacramento, I’ve been loving lots of spring time things like milkshakes, mocktails, florals and (of course!) pillows.

Raegan has also been loving our afternoon and evening walks outside where she points out every leaf, car, doggie, flower she sees. Her little language is so cute these days, I just love listening to her babble and talk. 

Here are a few other things I’ve been loving lately:




Mocktails — I love being pregnant, but one thing I have been missing lately is a nice cold margarita/sangria/beer (any cold cocktail really!) on the patio. The next best thing is a pretty mocktail in a fun glass with a straw :) I’ve been loving Trader Joe’s Sparkling French Berry Lemonade and their Villa Italia Italian Blood Orange Soda. Both are fruity, sweet and so good on ice. 


Florals — I picked up these really pretty floral placemats (left) at Home Goods last week and I love them. They make me excited to set the table for dinner every night! Alex is not a fan of florals so I have to think of small (and temporary) ways to add them into our house and Alex approved of these ;) I also picked up this gorgeous cloth napkin (right) from Cost Plus World Market with plans to turn it into a pillow. 





Healthy Chocolate Peanut Butter Banana Milkshake — Raegan and I have been making these almost daily they are so good and the perfect blend of sweetness, chocolate, peanut butter and banana. Plus it's healthy! When I’m lucky, Raegan will share a few sips with me before she scarfs it all down herself ;)

Ingredients: one frozen banana (sliced before frozen), about 1/2 cup milk, a large spoonful of peanut butter, 1 tablespoon unsweetened cocoa powder, a splash of vanilla, a pinch of kosher salt, 3-4 ice cubes. Blend together in a blender until smooth and enjoy! 
This makes one but can easily be doubled for two. (Recipe adapted from The Detoxinista)


Animal board books — I've mentioned before how much Raegan (and I!) both love kids books and animals so I ordered two animal-themed board books off Amazon recently and they have quickly become favorites. The Jungle Book is another Baby Lit book (we also love the Alice in Wonderland Baby Lit board book too) but teaches animals, some you won't typically find in kiddo books like a porcupine, wolf and jaguar. Plus the art is so cute — I especially love the bear page with a bear lounging on his back in the water, holding a bear-shaped honey sipping it with a straw! 

Raegan has also been really loving Giraffes Can't Dance, a really cute story about a giraffe who thinks he can't dance, but find he really just needs the right song. The art is really cute in this one too and it's a great one to help kids learn different animals.

Black Dot Ikat Pillow — Since Lindsey & I launched our pillow business (!), I have been "testing" out our pillows all throughout the house and can honestly say I love them all! I am so happy with how they turned out and may have to keep some for myself! ;) One of my favorites is the Black Dot Ikat. Black and white is so classic but these ikat dots make it really fun too. Food Friday: Chewy Peanut Butter Granola

So Lauren found this recipe about a year ago here on Pinterest* and the granola part has become a staple in her kitchen, my dad's kitchen and my kitchen. Since then we have made some variations to the recipe. If you like peanut butter, oats and honey, you are going to love this simple granola. It's good alone as a snack or my favorite over Greek yogurt with honey and fresh strawberries. Here is the recipe along with some variations we have tried.





Chewy Peanut Butter Granola

1/2 cup peanut butter
1/2 cup honey (I usually don't fill the cup to the rim)
2 cups old fashioned oats
1 teaspoon pure vanilla extract**

Preheat oven to 350 degrees and prepare a 9X13 pan by greasing it with Pam.

Put honey, peanut butter and vanilla into a medium, microwave safe bowl. Microwave for 30 seconds until the peanut butter is slightly melted. Wisk together until smooth. Use a rubber spatula to mix in the oats, making sure the oats are thoroughly coated in the peanut butter/honey mixture. Spread the granola into the prepared pan and bake for 8 minutes.

Let cool completely before you crumble any large chunks into bite-sized pieces. Store in an airtight container for up to two weeks - yeah right it will be long gone by then!

Here are some variations that we have tried. My dad has used almond butter instead of peanut butter and adds dried cherries or raisins before cooking and swears it's better than the original. If you want more of a dessert, try adding chocolate chips before baking. Once I added a handful of milk chocolate chips. I don't know if that was a good idea or a bad idea because I ended up eating most of the batch by that night! And because I am trying my hand at clean eating, this is a very simple recipe to convert. Simply use all-natural peanut butter (you know the kind you have to stir before eating) instead of your typical peanut butter.

*The Pinterest recipe is for a parfait.

**One of the first times my dad made this recipe, he accidently grabbed peppermint extract. We do not recommend this. It tasted awful, but we got a good laugh out of it so maybe it was worth it!

Day in the Life of a Mom Without Her Kids

Today has been a rare day! My morning started out like most days. The baby monitor starts making noises with the sounds of Jayden moving around and smacking her lips because she is hungry. I wait until she starts fussing a bit more before I finally go into her room, change her diaper and bring into my bed to feed her. While I am nursing, Jena wakes up and immediately starts calling "mommy, daddy". Of course, Jeff is still passed out next to me (he is on his two week recess as well)  so I nudge him and ask "Can you get Jena?" He replies with a yes and proceeds to roll over and start snoring again. Meanwhile Jena is getting annoyed because her bed it a bit too tall for her to get down on her own. So once again I nudge him, with a little more force this time. He's now annoyed because I woke him up - he is not a morning person! By the time I'm done nursing Jeff has fallen back to sleep and Jena is playing with her Leap Pad next to me. I put Jayden in her swing and falls back to sleep while I get Jena ready for the day.

After breakfast, Jeff gets up and puts Jena in the car while I get Jayden ready and snap a few pictures.


He drives them to daycare and I can't help but feel guilty - a day without the girls and Jeff. What the heck am I going to do? Treat myself to a pedicure? Go to Nordstrom's to use a gift card I got for Christmas? Maybe go to the movies? Nope - none of these. I go to the grocery store and take my time.

I look at the labels and start packing my cart with a ton of fruits and veggies and get very excited to get home to try to make kale chips, but before getting home I have to check out and while I'm bagging my groceries a young employee asks me if I wanted help. Usually I'm not to keen on other people bagging my groceries. Weird right? I don't even like when Jeff bags the groceries. See I have a system that helps me when I get home. All the freezer stuff goes together, all the refrigerated stuff together, all the produce together, all the meat together and so on. I should also tell you I was a grocery clerk when I was 16 and learned how to properly bag groceries. I reluctantly say yes because I notice there is a line behind me and I have a lot of stuff. Yet I instantly regret it. Out of the corner of my eye I watch him shove all sorts of things into one bag. "Whatever, just let it go" I think to myself. But when I get out to the car I start rearranging some of the bags and notice my bananas are at the bottom of a bag with a pineapple and a five pound bag of apples on top. My 16 year old self starts yelling - in my head - what the heck? Who taught you how to bag groceries? Apparently they don't teach you that anymore, I mean why would they? It's not like it your job to know, right? I guess it is no longer common sense to put bananas and tomatoes on top to lessen bruising and eggs in a separate bag.

Once I get everything settled into the car I start thinking about how nice it's going to be to get home, crank up the music and put away my groceries in peace. By this point I am no longer feeling any guilt. It's now 4:30 in the afternoon and soon I will pick up the girls from daycare. It has been an easy day but I can't wait to get back to the chaos only kids can bring!

Easter Basket Ideas for Toddlers

Even though Easter is a month away, I'm already starting to get excited! Raegan had a small basket last year, but it was the weekend of my mom's Celebration of Life so Easter goodies weren't exactly high up on my mind. But this year, we'll be celebrating with some small goodies, dying Easter eggs, an egg hunt and a yummy brunch (just the way my mom would have wanted!).

I've put together this fun roundup of Easter basket items for a toddler girl and although I would love to buy Raegan all of these goodies, we'll probably stick to just a few. 

For toddler boys, some of these things like the books, stickers and chalk would still work. I'm a little clueless though when it comes to boys. :) 

Here are a few toddler girl Easter basket ideas: 

1> H&M Jersey Top in brown $4.95 // This top is so cute, I could just imagine Raegan spending all day pointing to her shirt and saying "kitty!"

2> Colored and white Chalk two pack on Amazon $4.79 // This will most likely make it into Raegan's basket this year. She loves to color on her chalk table and when the weather is nice we head outside for sidewalk chalk!

3> Here Comes the Easter Cat on Amazon $12.95 // I spotted this book at Barnes & Noble the other day and fell in love. Raegan (& I!) clearly have a thing for cats!

4> Piggy Paint on Amazon $9.09 // Let's see if I can get Raegan to hold still long enough to paint her little piggies! These are non-toxic nail polishes for kiddos!

5> Xhilaration Polka Dot Coin Purse at Target $6.99 // Raegan is obsessed with Alex's and my wallet, she loves taking things out, putting them back, zipping and unzipping. This could easily entertain her for a while!

6> Let's Color! coloring book on Amazon $5.36 // I came across this coloring book that seems so practical. Starts off with teaching scribbles, them moves up from there. 

7> House of Mia infinity scarf child size $24 // R's also obsessed with my scarves. She loves to put them around her neck and walk around the house. These are so cute and would look cute with so many outfits! 

8> Alphabet stickers at Target $.99 // Another obsession of R's: stickers. Most of them end up on my face or in random places in our house, but I love how these will help out with teaching her the alphabet and numbers. 

I've also been thinking about non-candy goodies to stuff inside plastic Easter eggs and came up with a few we might do:
  • Goldfish crackers
  • Balloons
  • Fruit snacks
  • Stickers (A page cut up so they fit inside)
  • Hair ties/clips
  • Cheerios
  • Chalk (may have to break it in half)

A Life Style Change: Clean Eating, Exercise & Time Management

I have always considered myself to be, for the most part, healthy. I don't eat out a lot and I cook most of the food I eat, but recently I realized several things, 1) just because I cook doesn't mean it's good for me, 2) I need to manage my time better, 3) I need to start exercising again, and 4) just because I am thin does not mean I am healthy!

I am not sure why I started realizing these things. It could be that I will be 29 this year. It could be that I have two kids and a secret fear they could get diabetes or childhood obesity (I know this is unlikely but it's always lingering in the back of my mind). It could be that I have seen several people on Facebook embrace a healthy life style and I want to follow suit. Or it could be the fact that my mom passed away at a young age and life is too precious to waste. I really don't know, but I do know that things have to change. I know this will be a huge adjustment for me and my family, but I am ready to take on the challenge.

Some things I will be trying out include Clean Eating, exercise DVD's, and cleaning and purging my house.

Food Friday: Chicken Salad Croissant Sandwich

I’m not sure what it is about chicken, but it’s hard for me to eat it when I’m pregnant. It’s usually not appealing, except for in chicken salad! Yum! 

I made this for dinner one night and it’s so simple, somewhat healthy, and pretty quick to put together. I add a bunch of fruit and goodies in mine, so it has a nice crunch from the walnuts, celery and apple, plus some sweetness from the grapes and cranberries. The butteriness of the croissant with all of the flavors is so good. This is one of my favorite sandwiches, for dinner or lunch. 



Chicken Salad Croissant Sandwich

*This will make enough for about five sandwiches

Ingredients:
2 chicken breasts, cooked and cubed or shredded (I bake mine with a little water at the bottom of the pan, without seasoning)
One apple, cored and chopped (I like Fuji)
About one cup of red, seedless grapes, cut in half
Two celery stalks, chopped
1/2 cup walnuts, roughly chopped
1/4 cup dried cranberries
1/2 cup nonfat plain yogurt
1/2 cup sour cream
1 tablespoon mayo
1/4 teaspoon dried thyme (or fresh, roughly chopped)
salt and pepper, to taste
Croissants

Directions:
Combine all ingredients through cranberries into a large bowl. In a smaller bowl, mix yogurt, sour cream, mayo and seasoning until combined. Add yogurt mixture to chicken mixture until it evenly coats (feel free to use as much or little yogurt dressing as you like)
Taste-test to see if you need more salt and pepper. 
Scoop about two large spoonfuls onto a croissant, cut in half and eat!

This recipe is easy to tweak depending on if you like more or less of certain ingredients, but all of the flavors work really well together! I hope you like it!

We're Launching a Pillow Business!

We are so excited/nervous/happy/scared to share with you all something that we have been working on for a while now — We will be launching a pillow business! Yikes! We’re working hard on getting our first pillow line out within the month and can’t wait to see what you guys think! 

We have picked out some really fun, colorful, modern fabrics that we LOVE and hope you will too! Here’s a peek at some of the fabrics:







I love finding and supporting small businesses, learning about them and how they got started. So here, goes, here’s our story:

Lindsey and I both love interior design (we actually both majored in interior design in college), love mixing and matching fabrics and getting creative with our living spaces. We’re both stay-at-home mamas (Lindsey also goes to school part-time) and both have been antsy to do something creative while taking care of our kiddos. We brainstormed and came up with the idea of putting our creativity, design background, and sewing skills to good use by making pillows.

A few things that I noticed while looking for pillows online for my own home, is that there aren’t a lot of affordable & fun pillows out there. There are a ton of fun, trendy, bright pillows that I would love to take home with me, but there’s no way I could justify spending $50+ on one pillow cover. So, we decided that our pillows have to be affordable. We want people who are on tighter budgets (like we are!) to be able to afford our pillows.

Both our husbands always laugh at us because we are always saying “fun pillows.” We both agree that rooms can be spruced up with some fun pillows. To us, fun pillows can be a pattern, a bright color, a shape, just something that makes a pop on a bed, couch, chair, outside or even on the floor.

We also want our pillows to be versatile. Many of our pillows in our launch line (!) work well together. That was important to us, since sometimes people love one pillow pattern but have a hard time visualizing how it might work with other patterns or colors. We love mixing and matching patterns and colors and had so much fun coming up with this first pillow lineup!

Raegan's Big Girl Room Planning

I can't believe I'm already thinking about Raegan's big girl room! It seems like I woke up one day and she was no longer my baby, but my little girl! 

Since baby #2 gets here at the end of summer, Alex and I will be busy getting Raegan's big girl room and baby #2's nursery all set up. Since we don't find out if baby #2 is a boy or girl until next month, I've been mostly gathering ideas and planning Raegan's room and I am having so much fun! 

A few things that we're planning/are must-haves for Raegan's big girl room:
  • A new bed (we'll be transitioning her over the summer! Yikes! Anyone have any tips?)
  • A chalkboard wall. She loves her chalkboard-top table and I just know she'll have fun getting creative on a wall. Plus I'm sure we'll have tons of fun teaching Raegan that the other walls are off-limits with chalk! ;)
  • Storage for small things like chalk, crayons, markers, etc. 
  • Floor pillows for her reading nook. 
  • She loves animals, so I'd love to incorporate animals into her room design. 
  • I will frame a card from my mom and dad at Raegan's baby shower. It has a giraffe, a pink hippo and other colorful animals on it, so it will be a fun pop of color, but also something sentimental. 
My vision for R's room is white walls and I'll bring in some pops of color through art, pillows (on the floor and on her bed), sheets, books and through some of the storage. I like the idea of neutral walls so that things will be easy to transition again once she gets older. 

Here are some rooms/ideas I'm loving and may incorporate into R's room:

I love the DIY animal tops to these mason jars. [Photo via Design Sponge]. I could definitely use these to store her chalk, crayons, markers and other goodies.


I'm not sure why, but I've been in love with incorporating flamingos into Raegan's room somehow. [Photo via Design Sponge] Not sure if I will do it through art or in another way. 

Raegan already loves her reading area so I'd love to add some floor pillows and a rug to make it super cozy. [Photo via Mommo Design]


I'm planning to do a small-scale chalk wall for Raegan. I think it will be a great space to practice her writing and numbers. {Photo via Mokkasin}

Since Alex is not a fan of florals, I would love to include floral prints into Raegan's room. I think it's totally possible to use florals in a fun kid-friendly way that doesn't look like grandma's outdated room! {Photo via 6th Street Design School, designer Kirsten Krason's house tour}

I'm also trying to anticipate how Raegan will use her room in the next few years. Right now, it's mostly for sleeping and diaper changes, and occasionally playing in there, especially as we get her bath ready. I'm sure we'll be tweaking as she gets older too, but if any of you mamas have any advice for things that are worthwhile/not worthwhile in a big kiddo's room, I'd love to hear it!

Food Friday: Kim's Chicken Casserole

This casserole is so yummy and easy to make! It's great to freeze and makes great left-overs. I mean what could go wrong with chicken and cheese? This recipe come courtesy of Lauren's good friend and college roommate, Kim. It was a regular dinner on the weekly menu then and has become a favorite in our household now.































Kim's Chicken Casserole

5 cups shredded, cooked chicken*
1 cup salsa
1 can cream of mushroom soup
1 small can sliced black olives
4 ounce can mild, diced green chilies
dash of cumin
10-12 corn tortillas (uncooked)
shredded cheddar and jack cheese

Preheat oven to 350 degrees.

Mix all ingredients except chicken, tortillas and cheese. Once mixed add chicken and stir  with a spoon.

Cut tortillas into long strips (like pasta). Place half of the tortillas on the bottom of a greased 9"x13" pan and spread half the chicken mixture over the tortillas and cover with jack cheese. Repeat the process with the rest of the tortilla strips and chicken mixture and cover with cheddar cheese.

Cook 35-45 minutes or until cheese is brown around the edges. Let set 5 minutes and enjoy.

*To save time I buy a rotisserie chicken and shred the entire thing, which makes about 5 cups.

A Typical Morning With a 16-Month-Old

I haven't done any posts all about Raegan yet, so I thought it would be fun to do a day-in-the-life post. I love reading other bloggers' typical day posts because it gives people a glimpse into their real life — no staged photos, no perfectly clean house, but instead a typical day and real life. 

Tuesday morning: It's about 6:30 a.m., Alex is up getting ready for work and I'm half asleep but listening to Raegan on the monitor babble and talk to her stuffed animals. This is when Alex and I both usually say, "Could she be any cuter?!" She is so happy in the morning and loves repeating words in her crib until we grab her. It makes me smile every morning. 

Just before 7, Alex goes into her room. I hear her hand him her Kittie, Monkey and Booger Bear, one at a time. She comes into the kitchen with Alex and gets a few bites of his breakfast while I put my contacts in and brush my hair. 

Around 7 a.m., Alex says his goodbyes and I love yous and tries to sneak a kiss, or two, from Raegan. 


It's time for breakfast. Raegan is having half a pancake leftover from the weekend, sliced strawberries and Greek yogurt. Lots of "uh-ohs," "mores," two spoons on the floor and yogurt all over her face while Sadie, our dog, sits underneath her high chair hoping to get anything Raegan doesn't want. Raegan kisses her pancake and tries to share her food with me. When she gets squirmy, I know breakfast is over. 



At 7:45 a.m., I try to get a few things done around the house. A pile of Raegan's clean clothes needs to be put away. What should take less than 5 minutes takes 15. Raegan takes random things out of the bottom drawer of her dresser (this drawer is in desperate need of organization, but it's become more of a junk drawer), she finds a picture of a hippo and gives him a kiss, the dog chases the cat under the crib and Raegan tries to get under there, but not before I catch her. Finally everything is put away. 

It's time for a diaper change, but only if I can catch her running away from me, down the hall, with a pair of pink overalls on her head. 

I make the bed around 8 a.m. while Raegan sits on a chair in our bedroom, talking with Siri on my phone. We come out to the living room, I turn on Jack Johnson and do a quick sweep and vacuum of the hardwood. 




Now it's time to play! Raegan usually picks a few books that she becomes obsessed with for the day. Today it's "Olivia Helps With Christmas" and "Where is Love, Biscuit?" We read both over and over and over again while she points to the doggie and kittie. I grab some chalk and let her play on her table, but today instead of drawing, she's more interested in pushing a chair around the living room. It eventually ends up by the couch and Raegan gets frustrated because she can't push it on the rug. 



It's 9:15 a.m. and time for snack. Leftover yogurt and strawberries from breakfast while we sit on the floor. Raegan's back to her happy self, dancing, eating crackers, practicing tippy toes and being followed by Sadie, whose hoping to get some crumbs. Raegan spots Frankie, our cat, on the chair. She pets him, hugs him, shares a cracker with him and pulls his tail until he gets grumpy and she gets annoyed with me telling her to be careful for the hundredth time. 




At 9:30 a.m., I grab some of her toys and books and take them into my room so I can take a quick shower while Raegan entertains herself. I can watch her point to the doggie in her book and climb up and down the chair. We go back into the living room and she plays with Sadie and some of her toys. 

By 10 a.m., Raegan is starting to get a little grumpy, but I don't want her to nap yet, so I distract her by making a healthy milkshake with banana, peanut butter and cocoa powder. We sit on the couch and thankfully she shares her milkshake with me. 


By 10:40 a.m., she's ready for her nap. We do a quick diaper change, I grab her milk, stuffed animals and put her down in her crib. Once she's finished her milk, she talks to her animals for sometimes half an hour, then the house is quiet. She's asleep! Ahhh. And now I can get stuff done! ;)
